Ingredients

  • 4 pieces trout fillets
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 pieces garlic cloves
  • 4 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 cup chicken or vegetable stock
  • 2 tablespoons heavy cream
  • 2 tablespoons fresh parsley
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Pat the trout fillets dry with paper towels and season both sides with salt and black pepper.

Step 2

In a large skillet, heat 2 tablespoons of olive oil over medium heat.

Step 3

Add the trout fillets, skin-side down if applicable, and cook for 3-4 minutes on each side until golden brown and cooked through. Remove and set aside on a plate.

Step 4

In the same skillet, lower the heat to medium and add 2 tablespoons of unsalted butter. Allow it to melt.

Step 5

Mince the garlic cloves and add them to the skillet. Sauté for 1-2 minutes until fragrant, being careful not to burn them.

Step 6

Pour in the chicken or vegetable stock and stir, scraping any browned bits from the bottom of the pan.

Step 7

Add 4 tablespoons of lemon juice and 1 teaspoon of lemon zest to the skillet. Let the sauce simmer for 2-3 minutes to reduce slightly.

Step 8

Stir in 2 tablespoons of heavy cream to make the sauce rich and creamy.

Step 9

Return the trout fillets to the skillet, spooning the sauce over the fish to coat. Let them warm through for 1-2 minutes.

Step 10

Sprinkle with freshly chopped parsley before serving.

Step 11

Serve the trout with the lemon sauce drizzled over the top. Pair with steamed vegetables or rice for a complete meal.
