Ingredients

  • 4 pieces trout fillets, skin-on
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 whole lime, juiced and zested
  • 2 tablespoons capers, drained and rinsed
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 0.25 cups all-purpose flour
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Pat the trout fillets dry with paper towels. In a shallow dish, combine the flour, salt, and black pepper. Lightly dredge the trout fillets in the flour mixture, shaking off any excess.

Step 2

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large non-stick skillet over medium heat. Once the butter is melted and foamy, add two of the trout fillets, skin-side down. Cook for 3-4 minutes until the skin is crispy, then carefully flip the fillets and cook for another 2-3 minutes. Transfer the cooked fillets to a plate and repeat with the remaining oil, butter, and fillets.

Step 3

Once all the fillets are cooked, lower the heat to medium-low. In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant. Add the capers and cook for another 1 minute.

Step 4

Stir in the lime juice and zest, scraping up any browned bits from the bottom of the skillet. Simmer for 2 minutes to allow the flavors to meld.

Step 5

Remove the skillet from the heat and stir in the chopped parsley. Spoon the lime and caper sauce over the trout fillets.
