  • 2 pieces Large eggs
  • 2 teaspoons Vanilla extract
  • 1.5 cups Fresh mango, diced
  • 0.75 cup Shredded sweetened coconut
  • 1 teaspoon Lime zest

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease each cup lightly.

In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.
