  • 0.5 cup Shredded coconut (unsweetened)
  • 2 cups Vegetable oil
  • 0.25 cup Powdered sugar (for dusting)

Directions

Step 1

In a medium bowl, whisk together the flour, sugar, baking powder, and salt.

In a separate small bowl, mix the coconut milk and egg until fully combined.

Slowly pour the wet ingredients into the dry ingredients, stirring until a smooth batter forms.

Finely chop the pineapple chunks and mash the banana. Gently fold both into the batter along with the shredded coconut.
