Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1 can (20 oz) Pineapple chunks (canned, with juice)
  • 1 cup Coconut milk (unsweetened)
  • 2 tablespoons Soy sauce
  • 2 tablespoons Honey
  • 2 tablespoons Fresh lime juice
  • 3 cloves Garlic cloves (minced)
  • 1 teaspoon Fresh ginger (grated)
  • 2 tablespoons Cornstarch
  • 2 tablespoons Fresh cilantro (chopped, for garnish)
  • 4 cups Cooked jasmine rice or coconut rice (optional, for serving)

Directions

Step 1

Place the chicken breasts in the bottom of the Crock Pot in a single layer.

Step 2

Open the can of pineapple chunks and pour both the pineapple and its juice over the chicken.

Step 3

In a medium mixing bowl, whisk together the coconut milk, soy sauce, honey, lime juice, minced garlic, and grated ginger.

Step 4

Pour the coconut milk mixture over the chicken and pineapple in the Crock Pot.

Step 5

Cover the Crock Pot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked and tender.

Step 6

About 30 minutes before the cooking time is complete, remove 1/4 cup of the cooking liquid and whisk it with the cornstarch to create a slurry.

Step 7

Return the slurry to the Crock Pot, stirring it into the sauce to thicken slightly.

Step 8

Once the chicken is cooked and the sauce has thickened, stir gently to coat the chicken in the tropical sauce.

Step 9

Serve warm over cooked jasmine or coconut rice, if desired.

Step 10

Garnish with freshly chopped cilantro before serving for a burst of freshness.
