Ingredients

  • 500 grams Beef (chuck or stew meat, cubed)
  • 400 ml Coconut milk
  • 1 medium Yellow onion, finely chopped
  • 3 cloves Garlic, minced
  • 1 tablespoon Fresh ginger, minced
  • 2 tablespoons Curry powder
  • 1 teaspoon Turmeric powder
  • 0.5 teaspoon Chili flakes (optional)
  • 200 grams Pineapple chunks (fresh or canned, drained)
  • 250 ml Beef stock
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 cups Cooked basmati or jasmine rice
  • 3 tablespoons Fresh cilantro, chopped
  • 4 pieces Lime wedges
  • 2 tablespoons Toasted coconut flakes
  • 200 grams Diced mango
  • 2 tablespoons Chopped peanuts (optional)

Directions

Step 1

Heat the vegetable oil in a large pot or Dutch oven over medium heat.

Step 2

Add the chopped onion and sauté until translucent, about 5 minutes.

Step 3

Stir in the garlic and ginger, cooking for another 2 minutes until fragrant.

Step 4

Add the curry powder, turmeric, and chili flakes (if using) to the pot, stirring constantly for 1 minute to toast the spices.

Step 5

Increase the heat to medium-high, then add the beef cubes. Cook for 4-5 minutes, stirring occasionally, until the beef is browned on all sides.

Step 6

Pour in the coconut milk and beef stock, stirring to combine. Bring the mixture to a gentle boil.

Step 7

Reduce the heat to low, cover the pot, and let the curry simmer for 30 minutes, stirring occasionally.

Step 8

Add the pineapple chunks to the curry and season with salt and black pepper. Continue to simmer uncovered for another 10-15 minutes, or until the beef is tender, and the sauce has thickened slightly.

Step 9

While the curry is simmering, prepare the rice according to the package instructions if not already cooked.

Step 10

To serve, spoon the cooked rice onto a plate or into a bowl. Ladle the tropical beef curry over the rice.

Step 11

Garnish with fresh cilantro and serve with lime wedges on the side.

Step 12

Offer additional condiments, such as toasted coconut flakes, diced mango, and chopped peanuts, for guests to customize their plates.
