  • 0.25 cup white wine

Directions

Step 1

Separate 6 scallops and set them aside for searing. Finely chop the remaining 6 scallops for the mousse and scallop chips.

Step 2

For the scallop mousse, take 4 scallops from the chopped batch and puree them in a food processor until smooth. Add a pinch of salt, white pepper, and 2 tablespoons of heavy cream. Blend again until silky. Chill the mousse mixture in the refrigerator.

To make scallop chips, slice 2 scallops into thin, even rounds. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Fry the scallop slices until golden and crispy (about 1-2 minutes per side). Drain on paper towels and set aside.
