Ingredients

  • 1.75 cups all-purpose flour
  • 2 cups granulated sugar
  • 0.75 cup unsweetened cocoa powder
  • 0.5 cup malted milk powder
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 0.5 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 0.25 cup malted milk powder
  • 3 tablespoons heavy cream
  • 1.5 teaspoons vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line them with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, sugar, cocoa powder, malted milk powder, baking powder, baking soda, and salt until well combined.

Step 3

Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix on medium speed for 2 minutes, scraping the bowl as needed.

Step 4

Reduce the mixer speed to low and carefully add the boiling water to the batter. Mix until the batter is smooth. It will be thin; this is normal.

Step 5

Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.

Step 6

Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer the cakes to a wire rack to cool completely.

Step 7

While the cakes are cooling, prepare the vanilla malted frosting. In a large bowl, beat the softened butter with an electric mixer on medium speed until creamy.

Step 8

Gradually add the powdered sugar and malted milk powder, mixing on low speed until combined. Scrape down the sides of the bowl as needed.

Step 9

Add the heavy cream and vanilla extract. Increase the mixer speed to high and beat for 3-4 minutes until the frosting is light and fluffy.

Step 10

Once the cakes are completely cooled, place one cake layer on a serving plate. Spread a generous layer of frosting over the top.

Step 11

Place the second cake layer on top and frost the top and sides of the cake. Smooth the frosting if desired.

Step 12

Slice and serve your Triple Malted Chocolate Cake with Vanilla Malted Frosting. Store leftovers in an airtight container at room temperature or in the refrigerator for up to 3 days.
