Ingredients

  • 2 cups All-purpose flour
  • 0.75 cup Granulated sugar
  • 1 teaspoon Baking powder
  • 2 teaspoons Ground ginger
  • 0.25 teaspoon Salt
  • 4 tablespoons Unsalted butter (softened)
  • 2 None Eggs (large)
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Fresh ginger (grated)
  • 0.33 cup Crystallized ginger (chopped finely)
  • 1 teaspoon Unsweetened cocoa powder (optional, for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, sugar, baking powder, ground ginger, and salt.

Step 3

In a large mixing bowl, cream the butter until light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract and freshly grated ginger.

Step 4

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Step 5

Stir in the finely chopped crystallized ginger to evenly distribute it throughout the dough.

Step 6

On a floured surface, divide the dough in half and shape each portion into a log approximately 10 inches long and 2 inches wide. Place the logs onto the prepared baking sheet, leaving at least 2 inches of space between them.

Step 7

Bake for 25-30 minutes, or until the logs are lightly golden and firm to the touch.

Step 8

Remove from the oven and let the logs cool for 10 minutes. Reduce the oven temperature to 300°F (150°C).

Step 9

Once cool enough to handle, use a serrated knife to slice the logs diagonally into 1/2-inch-thick biscotti.

Step 10

Arrange the slices cut-side down on the baking sheet and bake for an additional 15-20 minutes, flipping them halfway through for even crispness.

Step 11

Remove from the oven and let the biscotti cool completely before serving. Optionally, dust with a light sprinkle of cocoa powder for garnish.

Step 12

Store biscotti in an airtight container for up to two weeks.
