  • 80 ml molasses

  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground cloves
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 tablespoon fresh ginger, finely grated
  • 50 grams crystallized ginger, finely chopped
  • 2 tablespoons powdered sugar (optional, for dusting)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line an 8x8-inch (20x20 cm) baking dish with parchment paper, leaving overhang on the sides for easy removal.

Step 2

In a medium saucepan, melt the butter over low heat. Once melted, remove from heat and whisk in the brown sugar and molasses until smooth. Set aside to cool slightly.

In a small bowl, whisk the egg and vanilla extract together. Gradually add this mixture to the slightly cooled butter-sugar mixture, whisking continuously to combine.
