Ingredients

  • 4 cups Unsweetened shredded coconut
  • 1 cup Sweetened condensed coconut milk
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Coconut extract
  • 3 large Egg whites
  • 0.25 cup Granulated sugar
  • 12 ounces Dark chocolate (at least 70% cocoa), chopped
  • 1 teaspoon Coconut oil

Directions

Step 1

Preheat your oven to 325°F (160°C) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, combine the shredded coconut, sweetened condensed coconut milk, vanilla extract, and coconut extract. Stir until fully mixed and fragrant.

Step 3

In a separate bowl, using an electric hand mixer or stand mixer with a whisk attachment, beat the egg whites on medium speed until they become foamy.

Step 4

Gradually add the granulated sugar to the egg whites while continuing to beat. Increase speed to high and whisk until medium-soft peaks form.
