Ingredients

  • 200 grams Dark chocolate chips
  • 100 grams Milk chocolate chips
  • 100 grams White chocolate chips
  • 150 ml Raspberry puree
  • 2 tablespoons Unsweetened cocoa powder
  • 200 ml Heavy cream
  • 50 grams Butter
  • 2 tablespoons Sugar
  • 100 grams Fresh raspberries
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Sea salt

Directions

Step 1

Place the dark chocolate chips, milk chocolate chips, and white chocolate chips in three separate heatproof bowls.

Step 2

In a small saucepan, heat the heavy cream over low heat until it just begins to steam, but do not let it boil.

Step 3

Pour 100 ml of the warm cream over the dark chocolate, 50 ml over the milk chocolate, and 50 ml over the white chocolate. Let them sit for 1-2 minutes, then stir each bowl until the chocolate is fully melted and smooth.

Step 4

In a medium saucepan, combine the raspberry puree, sugar, and butter. Cook over medium heat, stirring frequently, until the sugar dissolves and the mixture starts to slightly thicken (about 3 minutes). Set aside to cool.
