Ingredients

  • 1 kg Beef (chuck or stewing beef), cut into bite-sized cubes
  • 3 tablespoons Olive oil
  • 1 large Onion, finely chopped
  • 4 Garlic cloves, minced
  • 2 teaspoons Smoked paprika
  • 1 teaspoon Dried oregano
  • 2 Bay leaves
  • 0.5 teaspoon Red chili flakes (optional for heat)
  • 2 tablespoons Tomato paste
  • 500 ml Beef stock
  • 150 ml Red wine (optional)
  • 1 cup Green or black olives, pitted
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Season the beef cubes with salt and pepper, then sear them in batches until browned on all sides. Remove the beef from the pot and set aside.

Step 3

Add the remaining tablespoon of olive oil to the pot, then sauté the chopped onion until soft and translucent, about 5 minutes.

Step 4

Stir in the minced garlic, smoked paprika, oregano, bay leaves, and chili flakes (if using). Cook for 1-2 minutes until fragrant.

Step 5

Add the tomato paste and cook for another 2 minutes, stirring to combine with the spices and onions.

Deglaze the pot with red wine (if using), scraping up any browned bits from the bottom of the pot. Let it simmer for 3-4 minutes to reduce slightly.

Add the olives to the pot, then continue to simmer uncovered for another 20-30 minutes, or until the beef is tender and the sauce has thickened.

Taste and adjust seasoning with more salt and pepper if needed.

Remove the bay leaves before serving. Garnish the stew with freshly chopped parsley.
