Ingredients

  • 4 pieces chicken breasts
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup spinach, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1.5 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil
  • 1 cup breadcrumbs
  • 0.5 cup grated Parmesan cheese
  • 1 large egg

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a baking dish.

Step 2

Prepare the stuffing by combining cream cheese, shredded cheddar cheese, chopped spinach, minced garlic, 0.5 tsp of paprika, 0.5 tsp of dried oregano, 0.5 tsp of salt, and 0.25 tsp of black pepper in a bowl. Mix until smooth and evenly combined.

Step 3

Using a sharp knife, carefully cut a pocket into the thick side of each chicken breast without slicing all the way through.

Step 4

Stuff each chicken breast generously with the prepared filling. Secure the openings with toothpicks as needed to hold the filling in.

Step 5

In a small bowl, whisk the egg with 1 tbsp of water to create an egg wash.

Step 6

In another bowl, combine breadcrumbs, grated Parmesan cheese, 0.5 tsp of paprika, 0.5 tsp oregano, and a pinch of salt and pepper.

Step 7

Brush the outside of each stuffed chicken breast with olive oil, then dip it into the egg wash, ensuring it is fully coated. Dredge the chicken in the breadcrumb mixture, pressing gently to adhere.

Step 8

Place the coated chicken breasts in the prepared baking dish. Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the coating is golden and crispy.

Step 9

Remove from the oven, let rest for 5 minutes, and carefully remove the toothpicks before serving. Enjoy your Treasure Chest Chicken Breasts!
