In a large mixing bowl, combine the all-purpose flour, granulated sugar, salt, and instant yeast.
Warm the milk to lukewarm (approximately 35°C or 95°F) and add it to the dry mixture.
Add the melted butter, egg yolks, and vanilla extract to the bowl and mix until the dough begins to come together.
Knead the dough on a floured surface for 8-10 minutes, or until it is smooth and elastic.
Place the dough into a lightly greased bowl, cover with a kitchen towel, and let rise for 60 minutes or until it doubles in size.
Preheat the oven to 180°C (356°F) and line a baking sheet with parchment paper.
To prepare for shaping the Trdelník, create cylindrical molds by wrapping foil around rolling pins or similar cylindrical objects. Lightly grease the foil to prevent sticking.
Divide the dough into 6 equal portions. Roll each portion into a long rope (about 1.5 cm thick) and wrap it around the prepared cylinder, overlapping the edges slightly so the dough adheres to itself.
Brush the wrapped dough with melted butter and roll it in a mixture of granulated sugar and ground cinnamon until coated thoroughly.
Place the wrapped dough (still on the cylinders) onto the baking sheet. Bake for 20-25 minutes, turning occasionally, until the pastry is golden brown and cooked through.
Carefully slide the baked Trdelník off the molds while they are still warm, and allow them to cool slightly on a wire rack.
Serve warm as is or with optional toppings like Nutella, whipped cream, or ice cream.
