Ingredients

  • 4 large Egg whites
  • 200 grams Granulated sugar
  • 1 teaspoon Vanilla extract
  • 3 medium Pears
  • 20 grams Unsalted butter
  • 2 tablespoons Brown sugar
  • 300 milliliters Heavy cream
  • 2 tablespoons Powdered sugar
  • 50 grams Hazelnuts
  • 75 grams Dark chocolate (70% cocoa)
  • 1 pinch Sea salt

Directions

Step 1

Preheat your oven to 150°C (300°F) and line a large baking tray with parchment paper.

Step 2

In a large, clean mixing bowl, whisk the egg whites using an electric mixer until soft peaks form.

Step 3

Gradually add the granulated sugar, one tablespoon at a time, whisking continuously, until stiff and glossy peaks form. Then whisk in the vanilla extract.

Step 4

Spread the meringue evenly onto the prepared baking tray, creating a rectangular shape with slightly raised edges to hold the toppings.

Step 5

Bake the meringue in the preheated oven for 50-60 minutes, or until it feels firm and dry to the touch. Turn off the oven, leave the door slightly open, and let the meringue cool completely inside the oven.

Step 6

While the meringue cools, prepare the pears. Peel, core, and slice them into quarters.

Step 7

In a skillet, melt the butter over medium heat. Add the pear slices, brown sugar, and a pinch of sea salt. Cook for 6-8 minutes, turning occasionally, until the pears are softened and caramelized. Set aside to cool.

Step 8

Toast the hazelnuts in a dry frying pan over medium heat for 3-4 minutes, shaking the pan often, until golden and fragrant. Let them cool slightly, then roughly chop them.

Step 9

In a separate bowl, whip the heavy cream with the powdered sugar until soft peaks form.

Step 10

Melt the dark chocolate in a heatproof bowl set over a pot of simmering water, or in short bursts in the microwave, stirring until smooth.

Step 11

To assemble the dessert, spread the whipped cream generously over the cooled meringue. Arrange the caramelized pear slices on top.

Step 12

Sprinkle the toasted hazelnuts over the pears, and drizzle the melted chocolate across the entire tray.

Step 13

Serve the tray-baked meringue immediately, cutting into squares for easy serving.
