  • 300 grams Dried mixed fruit (e.g., raisins, currants, sultanas)
  • 300 milliliters Strong brewed black tea
  • 250 grams Self-raising flour
  • 150 grams Light brown sugar
  • 1 large Egg
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Ground mixed spice
  • 1 tablespoon Honey (optional, for glazing)

Directions

Step 1

Place the dried mixed fruit in a large bowl and pour the strong brewed black tea over it. Cover and let soak overnight (or for at least 6 hours).

Preheat the oven to 150°C (300°F) and grease and line a 2-pound (900g) loaf tin with parchment paper.

In a mixing bowl, combine the self-raising flour, light brown sugar, ground cinnamon, and ground mixed spice.
