Ingredients

  • 1 bunch (about 8-10 leaves) Swiss chard
  • 2 tablespoons Olive oil
  • 3 cloves Garlic cloves
  • 1 can (15 ounces) Canned white beans (such as cannellini or great northern beans)
  • 0.3333 cup Vegetable broth
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 0.25 teaspoon Crushed red pepper flakes (optional)
  • 2 tablespoons Grated Parmesan or nutritional yeast (optional, for garnish)

Directions

Step 1

Thoroughly rinse the Swiss chard under cold water and pat it dry. Trim the stems and roughly chop both the stems and leaves, keeping them separate.

Step 2

Peel and finely mince the garlic cloves.

Step 3

Drain and rinse the canned white beans under cold water, then set them aside.

Step 4

Heat the olive oil in a large skillet or sauté pan over medium heat.

Step 5

Add the minced garlic to the hot oil and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Step 6

Add the chopped Swiss chard stems to the pan and cook for 3-4 minutes until they begin to soften.

Step 7

Stir in the Swiss chard leaves and cook for another 2-3 minutes, or until they wilt down.

Step 8

Pour in the vegetable broth and add the drained white beans. Stir to combine and cook for 5-7 minutes, allowing the flavors to meld and the mixture to heat through.

Step 9

Season with lemon juice, salt, black pepper, and crushed red pepper flakes (if desired). Adjust seasonings to taste.

Step 10

Remove from heat and transfer the mixture to a serving dish. Sprinkle with grated Parmesan or nutritional yeast if using, and serve warm.
