Ingredients

  • 500 grams potatoes
  • 1 large onion
  • 6 large eggs
  • 150 milliliters olive oil
  • 1 teaspoon salt

Directions

Step 1

Peel the potatoes and cut them into thin slices, approximately 3-4 mm thick.

Peel and finely slice the onion.

Step 3

Heat the olive oil in a large, non-stick frying pan over medium heat.

Add the potato slices and onion to the pan. Stir to coat them in the oil, then lower the heat to medium-low and cook, stirring occasionally, until the potatoes are tender but not browned (about 15 minutes). Use a slotted spoon to remove the potatoes and onions from the pan and place them in a large mixing bowl. Reserve the oil.

Step 5

In a separate bowl, beat the eggs and add the salt. Pour the beaten eggs over the cooked potatoes and onions. Mix gently to combine, being careful not to break the potato slices.

Wipe the frying pan clean and add back 2-3 tablespoons of the reserved oil. Heat the pan over medium heat.

Pour the potato, onion, and egg mixture into the pan, spreading it out evenly. Reduce the heat to low and cook until the edges are set and the bottom is golden brown (about 8-10 minutes).

Place a large plate over the frying pan and carefully flip the omelette onto the plate.
