  • 2.5 kg Beef rib roast (bone-in or boneless)
  • 2 tsp Salt
  • 1.5 tsp Black pepper
  • 2 tbsp Vegetable oil
  • 200 g Plain flour
  • 4 large Eggs
  • 300 ml Milk
  • 2 tbsp Dripping or sunflower oil (for Yorkshire pudding)

Directions

Step 1

1. Preheat the oven to 220°C (425°F).

2. Pat the beef rib roast dry with paper towels. Rub the surface with salt, black pepper, and vegetable oil to create a light coating.

3. Place the roast in a roasting tray fat side up. Roast in the oven for 20 minutes to sear the exterior.

4. Lower the oven temperature to 180°C (350°F) and continue to roast. Cook for approximately 18 minutes per 500g for medium-rare, or adjust based on your preferred doneness.

5. While the beef is cooking, prepare the Yorkshire pudding batter. In a mixing bowl, whisk together the plain flour and a pinch of salt. Make a well in the center and add the eggs.
