Ingredients

  • 500 ml Vegetable oil
  • 2 cloves Garlic, minced
  • 250 g Ground chicken
  • 150 g Cabbage, shredded
  • 100 g Carrot, julienned
  • 100 g Bean sprouts
  • 2 stalks Green onion, sliced
  • 2 tbsp Soy sauce
  • 1 tbsp Oyster sauce
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 20 pieces Spring roll wrappers
  • 1 Egg, beaten

Directions

Step 1

Heat 2 tablespoons of vegetable oil in a pan over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

Step 2

Add the ground chicken to the pan and cook until it is no longer pink, breaking it up with a wooden spoon, about 5 minutes.

Step 3

Stir in the cabbage, carrot, and bean sprouts. Cook until the vegetables are just tender, about 3 minutes.

Step 4

Add the sliced green onion, soy sauce, oyster sauce, salt, and black pepper. Mix well to combine, then remove the pan from heat. Let the filling cool slightly.

Step 5

Lay a spring roll wrapper on a clean surface, one of the corners pointing towards you. Place 2 tablespoons of the filling near the corner closest to you.

Step 6

Fold the corner over the filling, then fold in the two side corners. Roll up halfway, then brush the remaining exposed corner with beaten egg.

Step 7

Continue rolling up to seal the loempia. Repeat with remaining wrappers and filling.

Step 8

In a deep frying pan or wok, heat the remaining vegetable oil to 180°C (350°F). Carefully add the loempia, a few at a time, and fry until they are golden brown and crispy, about 3-4 minutes per batch.

Step 9

Remove the loempia using a slotted spoon and drain on paper towels.

Step 10

Serve the loempia warm with your choice of dipping sauce, such as sweet chili or soy sauce.
