  • 800 g waxy potatoes
  • 2 medium yellow onion
  • 125 g anchovy filets (Swedish style, or sprats in oil)
  • 300 ml heavy cream
  • 100 ml whole milk
  • 40 g unsalted butter
  • 3 tbsp breadcrumbs
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Preheat the oven to 200°C (390°F). Grease a 9x13-inch baking dish with a small amount of butter.

Step 2

Peel the potatoes and slice them into thin matchstick strips (around 3-4 mm thick). Alternatively, use a mandoline for uniform thickness. Place them in a bowl of cold water to prevent browning.

Peel and thinly slice the yellow onions. In a frying pan, melt 20g of butter over medium heat and sauté the onions until soft and translucent, about 5-7 minutes.

Drain the potatoes and pat them dry with a clean kitchen towel or paper towels.
