  • 900 grams beef chuck (or stewing beef), cubed
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 60 grams all-purpose flour
  • 2 tablespoons olive oil
  • 2 large onions, diced
  • 3 large carrots, peeled and sliced into thick rounds
  • 2 medium celery stalks, sliced
  • 2 medium parsnips, peeled and chopped
  • 3 medium potatoes, peeled and quartered
  • 2 tablespoons tomato paste
  • 1 liter beef stock
  • 500 milliliters Guinness beer
  • 2 bay leaves
  • 3 fresh thyme sprigs
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Season the beef with salt and black pepper and then toss it in the flour until evenly coated. Shake off any excess flour.

Step 2

Heat 1 tablespoon of olive oil in a large heavy-bottomed pot or Dutch oven over medium-high heat. Add the beef in batches, searing it on all sides until browned. Remove the beef and set aside.

Step 3

In the same pot, reduce the heat to medium and add the remaining olive oil. Sauté the onions, carrots, celery, and parsnips for about 5-7 minutes, until softened.

Stir in the tomato paste and cook for 2 minutes to caramelize it slightly.
