Ingredients

  • 2 cups Gram flour (besan)
  • 1 cup Ghee (clarified butter)
  • 1.5 cups Powdered sugar
  • 5 Green cardamom pods
  • 2 tablespoons Cashew nuts
  • 2 tablespoons Raisins
  • 2 tablespoons Pistachios (optional, for garnish)
  • 1 Pinch of salt

Directions

Step 1

Begin by finely chopping the cashew nuts and removing the seeds from the cardamom pods. Crush the cardamom seeds into a fine powder using a mortar and pestle or spice grinder.

Step 2

In a large heavy-bottomed pan, melt the ghee over a medium-low heat.

Step 3

Once the ghee is melted completely, add the gram flour (besan) to the pan. Stir continuously using a wooden spatula to prevent any lumps from forming. Ensure the flour is evenly coated with ghee.

Step 4

Continue roasting the gram flour over a medium-low flame for about 20 to 25 minutes. The flour will gradually change color to a golden brown and emit a nutty aroma. This step is crucial to achieving the authentic flavor of the laddu.

Step 5

Add a pinch of salt and the chopped cashew nuts to the pan. Roast for an additional 5 minutes until the cashews turn golden brown.

Step 6

Remove the pan from the heat and allow the mixture to cool down slightly until it is warm but not hot.

Step 7

Once the mixture is warm, stir in the powdered sugar and crushed cardamom. Mix well until the sugar is thoroughly incorporated.

Step 8

Add raisins and mix again.

Step 9

Grease your palms with a little ghee, and take a small portion of the mixture (approximately 2 tablespoons) into your palm. Gently press and shape it into a round ball. Repeat this process with the remaining mixture.

Step 10

Garnish each laddu with a small piece of pistachio if desired.

Step 11

Let the laddus cool completely and store them in an airtight container. They can last up to two weeks at room temperature.
