Ingredients

  • 250 grams Unsalted butter
  • 120 grams Powdered sugar
  • 2 teaspoons Vanilla extract
  • 2 large Egg yolks
  • 350 grams All-purpose flour
  • 50 grams Cornstarch
  • 0.25 teaspoons Salt
  • 200 grams Jam (apricot or raspberry recommended)
  • 20 grams Powdered sugar (for dusting)

Directions

Step 1

In a large mixing bowl, cream the unsalted butter and powdered sugar together until light and fluffy using a hand or stand mixer.

Step 2

Mix in the vanilla extract and egg yolks, one at a time, until fully incorporated.

Step 3

In a separate bowl, sift together the all-purpose flour, cornstarch, and salt.

Step 4

Gradually add the dry ingredients to the wet mixture, mixing until a soft, smooth dough forms. Do not overmix.

Step 5

Divide the dough into two portions, flatten each into a disk, wrap in plastic wrap, and refrigerate for 1 hour.

Step 6

Preheat the oven to 170°C (340°F) and line two baking sheets with parchment paper.

Step 7

On a lightly floured surface, roll out one portion of the dough to about 3mm (1/8 inch) thickness.

Step 8

Use a round cookie cutter (approximately 6 cm in diameter) to cut out circles of dough and place them on the prepared baking sheets.

Step 9

For half of the circles, use a smaller cutter (such as a star or heart) to create a hole in the center—these will be your top cookie layers.

Step 10

Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are just beginning to turn golden. Allow them to cool completely on a wire rack.

Step 11

Spread approximately 1 teaspoon of jam on the flat side of each full cookie circle.

Step 12

Dust the top cookie layers (those with the cut-out centers) lightly with powdered sugar.

Step 13

Carefully place the sugared top layers over the jam-covered bottom layers, pressing gently to sandwich them together.

Step 14

Repeat with the remaining cookies and store in an airtight container for up to 5 days. Enjoy these tender, jam-filled delights with a cup of tea or coffee!
