Ingredients

  • 2 pieces chipotle peppers in adobo sauce
  • 1 cup heavy cream
  • 0.5 cup beef stock
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 4 pieces optional garnish: fresh cilantro sprigs

Directions

Step 1

Pat the filet mignon steaks dry with a paper towel. Season all sides evenly with salt and black pepper. Let sit at room temperature for 10 minutes while you prepare the other ingredients.

In a large skillet, heat the olive oil over medium-high heat. Once the oil is shimmering, add the steaks. Sear each side for 2-3 minutes until a golden-brown crust forms.
