  • 2 pieces Boneless, skinless chicken breasts

  • 1 teaspoon Ground cumin
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 pieces Bolillo rolls (or other sandwich rolls)
  • 2 pieces Chipotle peppers in adobo sauce
  • 0.5 cup Mayonnaise
  • 1 tablespoon Lime juice
  • 1 cup Shredded lettuce
  • 1 cup Sliced tomatoes
  • 0.5 cup Sliced red onions
  • 1 pieces Avocado, sliced

Directions

Step 1

Preheat a grill pan or skillet over medium-high heat.

Step 2

Butterfly the chicken breasts or pound them to a uniform thickness of 1/2 inch for even cooking.

Step 3

In a small bowl, combine smoked paprika, ground cumin, garlic powder, salt, and black pepper. Rub the mixture evenly over both sides of the chicken breasts.
