Peel the green plantains by cutting off the ends and slicing along the ridges of the peel. Use your fingers or a knife to separate and remove the peel.
Slice the plantains into 1-inch thick rounds.
Heat the vegetable oil in a deep skillet or frying pan over medium heat until it reaches 350°F (175°C), or until a small piece of plantain sizzles when placed in the oil.
Add the plantain slices to the hot oil in a single layer. Fry for 2-3 minutes on each side, or until they are a light golden color. Be careful not to crowd the pan.
Remove the plantain slices from the oil using a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
Using the flat surface of a plate, bowl, or a tostones press, gently flatten each fried plantain slice to about 1/4 inch thick.
In a small bowl, mix water and 1/2 teaspoon salt to create a light brine. Quickly dip each flattened plantain slice in the brine, then pat dry with a paper towel to remove excess moisture.
Return the flattened plantains to the hot oil and fry for another 2-3 minutes on each side, or until golden brown and crisp.
Remove the tostones from the oil and place them on a clean paper towel-lined plate to drain. Sprinkle with the remaining salt while they are still hot.
