Cook Time:10 mins
Total Time:15 mins
Servings: 4

Ingredients

  • 120 ml Soy sauce (dark or light, based on preference)
  • 60 ml Mirin (sweet cooking rice wine)
  • 60 ml Sake
  • 5 g Bonito flakes (katsuobushi)
  • 2 tbsp Yuzu juice (or lemon juice as a substitute)

Directions

Step 1

1. In a small saucepan, combine the soy sauce, mirin, and sake.

Step 2

2. Place the saucepan over medium heat and bring the mixture to a gentle simmer. Do not let it boil as this can overpower the flavors.

Step 3

3. Once simmering, add the bonito flakes to the saucepan. Stir gently to ensure they are evenly distributed.

Step 4

4. Reduce the heat to low and let the mixture simmer for 3-5 minutes to allow the bonito flakes to infuse their umami flavor into the sauce.

Step 5

5. Remove the saucepan from the heat and let it cool slightly for about 5 minutes.

Step 6

6. Strain the sauce through a fine-mesh sieve or cheesecloth into a clean container to remove the bonito flakes.

Step 7

7. Stir in the yuzu juice (or lemon juice) once the sauce has cooled slightly to preserve its fresh, citrusy flavor.

Step 8

8. Transfer the finished Tossa Shoyu into a serving dish or small bowl and serve alongside sashimi, sushi, or other Japanese dishes.
