Ingredients

  • 6 large Eggs
  • 200 grams Cooked artichoke hearts
  • 100 grams Ham
  • 250 grams Potatoes
  • 3 tablespoons Olive oil
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (optional, chopped)

Directions

Step 1

Peel the potatoes and cut them into small cubes (about 1 cm in size). Finely dice the onion and mince the garlic.

Step 2

In a medium-sized frying pan, heat 2 tablespoons of olive oil over medium heat. Add the potatoes and cook for 8-10 minutes, stirring occasionally, until they start to soften and turn golden.

Step 3

Add the diced onion and minced garlic to the pan with the potatoes. Cook for another 5 minutes, stirring frequently, until the onion is translucent.

While the vegetables cook, chop the cooked artichoke hearts into bite-sized pieces and dice the ham. Set aside.

In a large mixing bowl, crack the eggs and whisk them with the salt and black pepper until well combined. Stir in the cooked potato and onion mixture, artichoke pieces, and ham.
