Ingredients

  • 6 pieces Corn tortillas
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Salt
  • 2 medium Ripe avocados
  • 1 medium Lime
  • 10 pieces Cherry tomatoes
  • 0.25 cups Red onion
  • 2 tablespoons Fresh cilantro
  • 1 small Jalapeño
  • 1 clove Garlic
  • 0.25 teaspoons Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Using a sharp knife, cut each tortilla into 6 equal triangles.

Step 3

Brush both sides of the tortilla triangles with olive oil and place them in a single layer on a baking sheet.

Step 4

Sprinkle a small pinch of salt over the tortillas and bake for 8-10 minutes or until lightly golden and crispy. Flip halfway through baking.

Step 5

While the tortilla triangles bake, prepare the avocado salsa. Start by mashing the avocados in a medium mixing bowl using a fork.

Step 6

Juice the lime and add it to the mashed avocados to prevent browning and add flavor.

Step 7

Dice the cherry tomatoes, finely chop the red onion, and mince the garlic and jalapeño. Add these to the avocado mixture along with the chopped cilantro.

Step 8

Stir well to combine and season the salsa with salt and black pepper to taste.

Step 9

Once the tortilla triangles are done baking, remove them from the oven and allow them to cool slightly.

Step 10

Serve the crispy tortilla triangles alongside the fresh avocado salsa for dipping and enjoy!
