Ingredients

  • 500 grams Yukon gold potatoes
  • 1 large White onion
  • 6 large Eggs
  • 250 milliliters Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Peel and wash the potatoes. Slice them into thin, even rounds, about 3 mm thick.

Peel the onion and slice it into thin strips.

Step 3

Heat the olive oil in a large nonstick frying pan over medium heat. Add the potatoes and onions, ensuring they are fully submerged in the oil. Cook for 15-20 minutes, stirring occasionally, until the potatoes are tender but not browned.

Step 4

Using a slotted spoon, carefully remove the potatoes and onions from the pan and transfer them to a large bowl. Let them cool slightly.

Step 5

In a separate bowl, whisk the eggs with salt and black pepper. Pour the eggs over the cooled potato and onion mixture and stir gently to combine.

Heat 2 tablespoons of the reserved olive oil in a smaller nonstick frying pan (about 8-10 inches in diameter) over medium-low heat. Pour the potato-egg mixture into the pan and spread it out evenly.

Cook the tortilla on one side for 6-8 minutes, or until the edges are set and the center is still slightly runny.

Place a large plate over the pan and carefully flip the tortilla onto the plate. Add another tablespoon of olive oil to the pan, then slide the tortilla back in, uncooked side down. Cook for another 4-5 minutes, until fully set.
