Peel the potatoes and cut them into thin slices, about 1/8-inch thick. Set aside.
Peel and finely slice the onion into half-moons.
Heat the olive oil in a large, nonstick frying pan over medium heat.
Once the oil is hot, add the sliced potatoes and onion. Season with 1/2 teaspoon of salt. Stir to coat everything in oil, then reduce the heat to low-medium and cook for 10-15 minutes, stirring occasionally, until the potatoes are tender but not browned.
Using a slotted spoon, remove the potatoes and onions from the pan and transfer them to a large mixing bowl. Let cool slightly.
Crack the eggs into the bowl with the potatoes and onions. Add the remaining 1/2 teaspoon of salt and beat everything together until the mixture is well-combined.
Heat the same frying pan over medium heat with a small drizzle of olive oil. Pour the egg, potato, and onion mixture into the pan, spreading it out evenly.
Reduce the heat to low and cook the omelette for 6-8 minutes, or until the edges are set and the bottom is golden brown. Shake the pan gently to ensure the omelette doesn’t stick.
Place a large plate or lid over the pan and carefully flip the omelette onto the plate.
Slide the omelette back into the pan with the uncooked side down and cook for another 4-5 minutes until fully set and golden brown on both sides.
Remove the omelette from the pan and let it rest for a few minutes before slicing. Serve warm or at room temperature.
