Ingredients

  • 500 grams potatoes
  • 6 large eggs
  • 1 medium onion
  • 150 milliliters olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Peel the potatoes and rinse them under cold water. Cut them into thin slices, approximately 3mm thick.

Peel and finely slice the onion.

Step 3

In a large, non-stick frying pan, heat the olive oil over medium heat. Once hot, add the potatoes and onion. Cook gently, stirring occasionally, until the potatoes are tender and the onions are translucent, about 20 minutes. Be careful not to brown them.

While the potatoes and onions are cooking, crack the eggs into a large bowl. Add salt and black pepper. Beat the eggs lightly with a fork until well mixed.

Step 5

Once the potatoes and onions are cooked, remove them from the pan with a slotted spoon and add them to the bowl with the beaten eggs. Stir gently to combine.

Remove excess oil from the frying pan, leaving just enough to coat the bottom. Return the pan to medium-low heat.

Pour the egg, potato, and onion mixture into the pan. Cook for 5-7 minutes or until the edges are set and the bottom is golden brown.

Using a flat lid or a large plate, carefully flip the tortilla. Slide it back into the pan and cook for another 5 minutes on the other side until it is golden brown and cooked through.

Remove from heat and allow to cool slightly. Slide onto a serving plate, slice, and serve warm or at room temperature.
