  • 1 medium-sized, grated Yellow squash
  • 1 medium-sized, grated Carrot
  • 2 tablespoons Olive oil
  • 2 cloves, minced Garlic
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 6 small (6-inch diameter) Tortilla wraps
  • 0.5 cups Shredded mozzarella cheese
  • 1 as needed Cooking spray
  • 0.5 cups Sour cream (for dipping, optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.

Step 2

Heat a skillet over medium heat and add the olive oil. Once hot, sauté the minced garlic until fragrant, about 1 minute.

Step 3

Add the grated yellow squash and carrot to the skillet. Cook for 3-4 minutes, stirring occasionally, until the vegetables soften and release some of their moisture.
