Ingredients

  • 16 oz cheese tortellini
  • 12 oz ground turkey sausage
  • 2 cups butternut squash, cubed
  • 1 medium apple, peeled and diced
  • 1 small shallot, minced
  • 6 leaves fresh sage leaves, chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 0.5 cup parmesan cheese, grated + extra for garnish
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes
  • 1 cup water

Directions

Step 1

Bring a large pot of salted water to a boil and cook the cheese tortellini according to package instructions. Drain and set aside, reserving 1/2 cup of the pasta water.

Step 2

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Cook the turkey sausage, breaking it up into small pieces with a spatula, until browned and fully cooked, about 6-8 minutes. Remove the sausage from the skillet and set aside.

Step 3

In the same skillet, add another tablespoon of olive oil along with the butter. Sauté the shallot for 2-3 minutes until softened, then add the butternut squash and apple. Cook for 5 minutes, stirring occasionally.

Add the chicken broth and water to the skillet, then bring to a simmer. Cook for 10-12 minutes, or until the butternut squash and apple are tender.

Add the cooked tortellini to the skillet and toss to coat. If the sauce is too thick, add the reserved pasta water, a few tablespoons at a time, until desired consistency is reached.

Top the pasta with the remaining parmesan cheese and chopped sage. Serve warm, garnished with extra parmesan if desired.
