Ingredients

  • 500 grams cheese tortellini
  • 300 grams salmon fillet, skinless
  • 200 grams ricotta cheese
  • 200 ml heavy cream
  • 30 grams unsalted butter
  • 1 tablespoon olive oil
  • 2 units garlic cloves, minced
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper, freshly ground
  • 30 grams grated Parmesan cheese (for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the cheese tortellini according to the package instructions. Reserve 1/2 cup of pasta water before draining and set aside.

Step 2

While the tortellini cooks, heat olive oil in a large skillet over medium heat. Season the salmon fillet with a pinch of salt and pepper, then sear it in the skillet for 2-3 minutes on each side until cooked through. Remove the salmon from the pan and set aside to cool slightly.

Reduce the heat to medium-low and melt the butter in the same skillet. Add the minced garlic and sauté for 1 minute until fragrant.
