Ingredients

  • 16 oz Cheese tortellini
  • 0.5 cup Basil pesto (store-bought or homemade)
  • 0.333 cup Sun-dried tomatoes (packed in oil, drained and chopped)
  • 0.25 cup Parmesan cheese (grated)
  • 1 tbsp Extra virgin olive oil
  • 2 cloves Garlic (minced)
  • 0 to taste Salt
  • 0 to taste Black pepper
  • 0 as desired Fresh basil leaves (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the cheese tortellini according to the package instructions until tender. Reserve 1/4 cup of pasta water before draining the tortellini.

Step 2

While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant, being careful not to burn it.

Add the chopped sun-dried tomatoes to the skillet and cook for 2 minutes, stirring occasionally.

Lower the heat and stir in the basil pesto. If the sauce is too thick, add a tablespoon of the reserved pasta water at a time until it reaches your desired consistency.
