Ingredients

  • 500 g Cheese tortellini
  • 2 tbsp Olive oil
  • 1 tbsp Unsalted butter
  • 250 g Cremini mushrooms, sliced
  • 2 Garlic cloves, minced
  • 3 Egg yolks
  • 60 g Grated Parmesan cheese
  • 100 ml Heavy cream
  • 0.5 tsp Salt
  • 0.25 tsp Ground black pepper
  • 2 tbsp Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the cheese tortellini according to the package instructions. Reserve 1/2 cup of pasta water, drain the tortellini, and set aside.

Step 2

In a large skillet, heat the olive oil and butter over medium heat. Add the sliced cremini mushrooms and cook for 6-8 minutes, stirring occasionally, until they are golden and tender.

Add the minced garlic to the skillet and sauté for 1 minute, or until fragrant. Turn off the heat and set the skillet aside.
