Ingredients

  • 16 oz cheese tortellini
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 garlic cloves, minced
  • 2 cups cherry tomatoes, halved
  • 4 cups baby spinach leaves
  • 0.5 cup parmesan cheese, finely grated
  • 0.5 tsp salt
  • 0.25 tsp black pepper, freshly ground
  • 0.25 tsp red pepper flakes (optional)
  • 2 tbsp fresh basil, chopped

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the cheese tortellini according to package instructions until al dente, then drain and set aside.

Step 2

While the tortellini is cooking, heat olive oil and butter in a large skillet over medium heat until the butter is melted and bubbling slightly.
