Ingredients

  • 16 oz Cheese tortellini
  • 1 large Red bell pepper, diced
  • 1 large Carrot, julienned
  • 1 medium Cucumber, diced
  • 1 cup Red cabbage, shredded
  • 0.25 cup Fresh cilantro, chopped
  • 2 Green onions, sliced
  • 0.25 cup Peanuts, chopped
  • 3 tbsp Soy sauce
  • 2 tbsp Fresh lime juice
  • 1 tbsp Creamy peanut butter
  • 1 tbsp Sesame oil
  • 1 tsp Honey
  • 1 tsp Fresh ginger, grated
  • 1 clove Garlic, minced
  • 0.25 tsp Red chili flakes (optional)

Directions

Step 1

Cook the tortellini according to the package instructions. Once tender, drain and rinse under cold water to cool. Set aside.

Step 2

While the tortellini is cooking, prepare the vegetables. Dice the red bell pepper and cucumber, julienne the carrot, shred the red cabbage, chop the cilantro, and slice the green onions.

Step 3

In a small mixing bowl, combine soy sauce, lime juice, peanut butter, sesame oil, honey, grated ginger, minced garlic, and red chili flakes (if using). Whisk until smooth and well combined to make the Thai dressing.

Step 4

In a large mixing bowl, add the cooked tortellini, prepared vegetables, and chopped peanuts. Pour the Thai dressing over the salad.

Step 5

Toss everything together gently until the tortellini and vegetables are evenly coated with the dressing.

Step 6

Taste the salad and adjust seasoning if needed. You can add a little more lime juice for acidity or a pinch of salt to enhance flavor.

Step 7

Serve immediately as a main course or a side dish, or chill in the refrigerator for 30 minutes to let the flavors meld together before serving.
