Ingredients

  • 16 oz Cheese tortellini
  • 1 lb Raw shrimp (peeled and deveined)
  • 1.5 cups Cherry tomatoes (halved)
  • 1 Cucumber (diced)
  • 0.25 Red onion (thinly sliced)
  • 0.5 cup Black olives (sliced)
  • 2 tbsp Fresh parsley (chopped)
  • 0.25 cup Olive oil
  • 2 tbsp Lemon juice
  • 2 cloves Garlic (minced)
  • 1 tsp Dijon mustard
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 tsp Paprika

Directions

Step 1

Cook the cheese tortellini according to the package instructions. Drain and rinse with cold water to cool completely. Set aside.

Step 2

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the raw shrimp, paprika, and a pinch of salt and pepper. Cook for 2-3 minutes on each side or until the shrimp is opaque and cooked through. Remove from heat and let cool.

Step 3

Prepare the dressing by whisking together olive oil, lemon juice, minced garlic, Dijon mustard, salt, and black pepper in a small bowl. Taste and adjust seasoning as needed.
