  • 150 grams Peas (fresh or frozen)
  • 2 tablespoons Unsalted butter
  • 250 milliliters Heavy cream
  • 50 grams Parmesan cheese, grated
  • 2 cloves Garlic, minced
  • 1 tablespoon Extra virgin olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper, freshly ground
  • 2 tablespoons Fresh parsley, chopped (optional for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the tortellini according to the package instructions. Reserve 1/2 cup of pasta water before draining.

Step 2

Heat the olive oil and butter in a large skillet over medium heat. Once melted, add the minced garlic and sauté for 1 minute until fragrant.

Add the sliced mushrooms to the skillet and cook for 5-7 minutes until they release their liquid and start to brown.
