Ingredients

  • 10 ounces Cheese tortellini
  • 8 ounces Bow tie pasta (farfalle)
  • 1.5 cups Cherry tomatoes, halved
  • 1 medium Cucumber, diced
  • 1 medium Red bell pepper, diced
  • 0.5 medium Red onion, thinly sliced
  • 0.75 cup Black olives, sliced
  • 1 cup Mozzarella balls (ciliegine), drained
  • 0.25 cup Fresh basil, chopped
  • 0.25 cup Olive oil
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Honey
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic, minced
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the tortellini according to package instructions, about 6-8 minutes, until tender. Drain and rinse under cold water to stop the cooking process.

Step 2

In the same pot of boiling water, cook the bow tie pasta according to package instructions, about 10-12 minutes, until al dente. Drain and rinse under cold water.

Step 3

In a large mixing bowl, combine the cooked tortellini, bow tie pasta, cherry tomatoes, cucumber, red bell pepper, red onion, black olives, and mozzarella balls.
