Ingredients

  • 16 oz Cheese tortellini
  • 12 oz Asparagus
  • 3 tbsp Unsalted butter
  • 4 cloves Garlic cloves, minced
  • 1.5 cups Heavy cream
  • 1 cup Parmesan cheese, grated
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Fresh parsley, chopped (for garnish)
  • 1 tbsp Olive oil

Directions

Step 1

Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the tortellini and set aside.

Step 2

While the tortellini cooks, trim the tough ends off the asparagus and cut the stalks into 2-inch pieces.

Step 3

In a large skillet or sauté pan, heat 1 tablespoon of olive oil over medium heat. Add the asparagus and cook for 3-4 minutes, stirring occasionally, until tender but still crisp. Remove the asparagus from the pan and set aside.

Step 4

In the same skillet, reduce the heat to medium-low and melt the butter. Add the minced garlic and sauté for 1-2 minutes, stirring frequently, until fragrant but not browned.

Step 5

Slowly pour in the heavy cream and stir well to combine. Bring the mixture to a gentle simmer, then stir in the grated Parmesan cheese until fully melted and the sauce is smooth.

Step 6

Season the sauce with salt and black pepper, adjusting to taste. If the sauce is too thick, add a splash of the reserved pasta water to loosen it to your desired consistency.

Step 7

Add the cooked tortellini and asparagus to the skillet, gently tossing to coat everything evenly in the garlic cream sauce. Cook for an additional 1-2 minutes to ensure everything is warmed through.

Step 8

Remove from heat and sprinkle with freshly chopped parsley for garnish.

Step 9

Serve immediately, with extra Parmesan cheese on the side if desired.
