Ingredients

  • 3 pieces large eggplants
  • 4 pieces eggs
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 3 tablespoons vegetable oil
  • 1 teaspoon garlic powder
  • 1 small onion, finely chopped
  • 1 medium tomato, chopped

Directions

Step 1

Preheat your oven to 400°F (200°C). Prick the eggplants all over with a fork to allow steam to escape and prevent bursting.

Place the eggplants on a baking sheet and roast in the oven for 20-25 minutes until the skin is wrinkled and the flesh is tender.
