Ingredients

  • 2 cups Cherry tomatoes
  • 1 cup Pearl onions
  • 3 tablespoons Olive oil
  • 4 large Garlic cloves
  • 8 ounces Fresh mozzarella cheese
  • 8 leaves Fresh basil leaves
  • 2 tablespoons Balsamic glaze
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Peel the pearl onions and place them on a baking sheet lined with parchment paper.

Step 3

Add the garlic cloves to the baking sheet (leave them whole and unpeeled to roast).

Step 4

Drizzle 1 tablespoon of olive oil over the onions and garlic. Sprinkle with a pinch of salt and pepper. Toss to coat.

Roast the onions and garlic in the oven for 20-25 minutes, stirring halfway through, until the onions are caramelized and the garlic is soft.
