Ingredients

  • 4 large ripe tomatoes
  • 150 grams canned tuna (in olive oil or water, drained)
  • 2 tablespoons capers (rinsed and drained)
  • 2 tablespoons fresh parsley (chopped)
  • 1 tablespoon fresh basil (chopped)
  • 1 tablespoon lemon juice
  • 1 tablespoon extra virgin olive oil
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 clove garlic (minced)

Directions

Step 1

Wash and dry the tomatoes. Cut off the tops (about 1/2 inch from the stem) and set them aside. Scoop out the seeds and pulp using a spoon, being careful not to pierce the sides or bottoms of the tomatoes. Set the hollowed-out tomatoes upside down on a kitchen towel to drain while you prepare the filling.

In a medium bowl, combine the drained tuna, capers, parsley, basil, lemon juice, olive oil, garlic, salt, and black pepper. Mix gently until well combined.
