  • 0.5 cup cucumber (diced)
  • 0.5 cup bell pepper (diced, any color)
  • 0.25 cup red onion (finely chopped)
  • 2 tablespoons fresh parsley (chopped)
  • 0.25 cup feta cheese (crumbled)

Directions

Step 1

Bring a medium-sized pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

While the pasta cooks, prepare the tomatoes. Slice off the top of each tomato (about 1/4 inch from the top) and scoop out the inner pulp and seeds using a spoon. Be careful not to puncture the tomato walls. Set the hollowed-out tomatoes aside and discard the pulp or save for another use (such as a sauce).
