Ingredients

  • 6 pieces large ripe tomatoes
  • 1 cup orzo pasta
  • 1 cup jumbo shrimp (peeled, deveined, and cooked)
  • 2 tablespoons lemon juice
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh dill (chopped)
  • 2 tablespoons fresh parsley (chopped)
  • 0.25 cup red onion (finely chopped)
  • 0.5 cup feta cheese (crumbled)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Bring a medium-sized pot of salted water to a boil. Cook the orzo pasta according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water to stop the cooking, then set aside.

Step 2

While the orzo is cooking, prepare the tomatoes. Slice the tops off of each tomato and use a spoon to gently scoop out the seeds and flesh, creating a hollow shell. Reserve the tomato flesh for another use or discard. Lightly sprinkle the inside of the tomatoes with a pinch of salt, then set them upside-down on a plate lined with paper towels to drain off excess liquid.

Step 3

In a large mixing bowl, combine the cooked orzo, shrimp, lemon juice, olive oil, dill, parsley, red onion, and feta cheese. Stir gently to combine. Season with salt and black pepper to taste.

Step 4

Turn the tomatoes upright and place them on a serving platter. Spoon the orzo shrimp salad into each tomato, filling them generously.
